Thyme Roasted Carrots

  • 2 tablespoons olive oil or grapeseed oil

  • 1 tablespoon fresh thyme leaves

  • 1 teaspoon oregano

  • Salt and pepper, to taste


  1. Preheat your oven to 400°F (200°C).

  2. In a large mixing bowl, toss the carrot with the grapeseed oil, thyme leaves, oregano, salt, and pepper.

  3. Spread the carrots out in a single layer on a baking sheet lined with parchment paper.

  4. Roast the carrots in the preheated oven for 25-30 minutes or until they are tender and lightly caramelized.

  5. Serve the thyme-roasted carrots hot as a side dish for your favorite main course.
