  • 5½oz ground almonds you can also add a small handful of hazelnuts if you prefer

  • 3½oz sun-dried tomatoes in oil

  • 3½fl oz extra virgin olive oil

  • ¾fl oz red wine vinegar

  • 1 tbsp smoked paprika

  • 1 tsp cayenne pepper or a few blanched cascabel chili peppers

  • 1 tsp sea salt


  1. To make this delicious sauce, start by charring red peppers on a baking tray using a blowtorch, gas hob flame, or a very hot grill.

  2. Once charred, place the peppers in a bowl and cover with cling film to steam and soften the skins.
