Chiquita's Secret Golden Banana Bake


Ingredients:

  • 5 very ripe bananas, mashed (chiquita if possible)

  • 1 stick butter, more to grease pan

  • 1 teaspoon baking soda

  • Pinch of salt

  • 3/4 cup brown sugar (1/2 cup if you prefer it less sweet)

  • 1 tablespoon granulated sugar

  • 2 large egg, beaten (room temperature)

  • 1 teaspoon vanilla extract

  • 2 cups of all-purpose flour

  • 1/8 teaspoon cinnamon

  • 3 tablespoons Pecans (or chopped walnuts)

  • handful of oatmeal and sliced bananas


Directions:

  1. Preheat your oven to 350°F, and butter a 4x8-inch loaf pan.

  2. In a mixing bowl, cream the butter and granulated sugar together, mix in the mashed ripe bananas with a fork until completely smooth.

  3. Mix in the baking soda and salt. Stir in the brown sugar, beaten egg, and vanilla extract. Mix in the flour, and cinnamon.
