Ingredients for the Meatballs:

  • 1/2 lb. lean ground beef

  • 1/2 lb. mild Italian sausage

  • 1/2 cup grated Parmesan cheese, plus more for serving

  • 1/4 cup chopped fresh flat-leaf parsley, plus more for serving

  • 1 large egg

  • 1 garlic clove, finely chopped

  • 1/2 cup panko breadcrumbs

  • 1/2 tsp. kosher salt

  • 1/2 tsp. ground black pepper

Ingredients for the Soup:

  • 1 tbsp. olive oil

  • 1 cup chopped carrots

  • 1 cup chopped yellow onion

  • 1 cup chopped celery

  • 3 garlic cloves, finely chopped

  • 8 cups chicken broth

  • 1/2 cup pearl couscous or small pasta like orzo or ditalini

  • Salt and pepper to taste

  • 2 cups baby spinach or escarole, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, combine all the meatball ingredients and mix well. Form into 1-inch meatballs and place on the baking sheet.

  3. Bake for 15-20 minutes until browned and cooked through.

  4. Meanwhile, heat olive oil in a large pot over medium heat. Add carrots, onion, celery, and garlic; cook until softened.

  5. Add chicken broth and bring to a boil. Add the couscous or pasta and cook according to package instructions until al dente.

  6. Add the cooked meatballs to the soup and simmer for a few minutes.

  7. Stir in the spinach or escarole and cook until wilted.

  8. Season with salt and pepper to taste. Serve hot, garnished with extra Parmesan cheese and parsley.
