Filipino Pork Menudo is a hearty and flavorful stew that’s a staple in Filipino cuisine. It’s made with pork, liver, potatoes, carrots, bell peppers, and sometimes, raisins and hotdogs, all simmered in a rich tomato sauce.

Here’s a basic recipe to get you started:

Ingredients:

  • 2 lbs pork shoulder, cut into cubes

  • 4 ounces pork liver, cut into cubes

  • 1 large potato, diced

  • 1 large carrot, diced

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 cup tomato sauce

  • 1/2 cup water or pork broth

  • 3 tablespoons soy sauce

  • 1 teaspoon sugar

  • Salt and pepper to taste

  • 1/2 cup frozen green peas (optional)

  • 1/2 cup raisins (optional)

  • 2-3 hotdogs, sliced (optional)

Instructions:

  1. In a bowl, marinate the pork cubes in soy sauce for at least 30 minutes.

  2. In a pot, heat oil over medium heat and sauté garlic and onions until translucent.

  3. Add the marinated pork (along with the marinade) and cook until lightly browned.

  4. Stir in the tomato sauce and water or broth, then bring to a boil.

  5. Lower the heat, cover, and simmer until the pork is tender, about 30-40 minutes.

  6. Add the liver, potatoes, carrots, bell peppers, sugar, salt, and pepper. Continue to simmer until the vegetables are cooked, about 10-15 minutes.

  7. If using, add the green peas, raisins, and hotdogs in the last 5 minutes of cooking.

  8. Adjust seasoning if necessary and serve hot with rice.
